Step By Step Making Japanese Omelet

Omurice is an example of yōshoku consisting of an omelette made with fried rice and usually topped with ketchup. It is a popular dish both commonly cooked at home and often found at western style diners in Japan. Omurice is also popular in Taiwan, another territory formerly occupied by Japan. Children, in particular, enjoy omurice, and it is often featured in okosama-ranchi or kids' meals.

Chicken breast
Cooking Oil
Chicken Stock
1. Boil the chicken breast and chop into even pieces (1-3cm)
2. Chop the onion into even sizes
3. Chop the bacon into even sizes
4. Prepare rice which has been cooked the night before (prevents sticking)
Heat up the wok with cooking oil
5. Pour the excess oil out
6. Put in some butter on the wok and when it melts
7. Add the chopped onion, mushroom, bacon and chicken breast
Season with salt and pepper
8. Add 1 teaspoon of chicken stock and 1 cup of water
9. Add the rice and keep frying
10. When the color of the rice changes , add some tomato sauce and fry agin
Plate it as shown

Eggs (3 eggs per portion)
Chicken Consomme
Crack the eggs into a mixing bowl (3 eggs per portion)
1. Whip eggs with hand mixer (Mix the eggs well in order to make a delicious omelet)
2. Filter egg mixture with a strainer
3. Place mixture into the fridge for 5 hours ( or overnight) until the bubbles on top of the mixture are gone
if you are in a rush, you could just do as shown above until all bubbles are gone
4. For each 150g of egg mixture, season with some salt, pepper and chicken consomme
Chicken consomme plays an important part in our omelet
Cooking Omelet
5. Spread butter evenly over the frying pan while heating it up under high heat
Pour in 1 portion of egg mixture into the frying pan
Keep stirring while cooking to avoid overcook
Cook until the outer layer of omelet is cooked and the inner layer is half cooked, then flip the omelet slowly as shown above
6. Place cooked omelette on top of rice and use spoon to evenly spread out the omelet.

Step 3 - Finishing with White Sauce and Curry

Step 3 - Finishing with White Sauce and Curry

Dark curry sauce
Ketchup or Mayonnaise (optional)
soy sauce or honey (optional)
1. Heat up the curry sauce and add a cup of water
2. Keep stirring
Note : the sauce is universal and can be used on rice, burgers etc
3. Pour the sauce around the omelet
4. Use fresh cream and ketchup for topping
