Crack the eggs into a mixing bowl (3 eggs per portion)

1. Whip eggs with hand mixer (Mix the eggs well in order to make a delicious omelet)

2. Filter egg mixture with a strainer

3. Place mixture into the fridge for 5 hours ( or overnight) until the bubbles on top of the mixture are gone

if you are in a rush, you could just do as shown above until all bubbles are gone

4. For each 150g of egg mixture, season with some salt, pepper and chicken consomme

Chicken consomme plays an important part in our omelet

Cooking Omelet

5. Spread butter evenly over the frying pan while heating it up under high heat

Pour in 1 portion of egg mixture into the frying pan

Keep stirring while cooking to avoid overcook

Cook until the outer layer of omelet is cooked and the inner layer is half cooked, then flip the omelet slowly as shown above

6. Place cooked omelette on top of rice and use spoon to evenly spread out the omelet.
